Our second wine is made from a blend of Merlot and Cabernet Franc, harvested and sorted by hand. Little woody, it is a very fruity wine that goes well with all types of dishes.

Terroir:

Clay-limestone and sandy-loam soil on hillsides overlooking the Dordogne river, southern exposure.

Grape varieties:

Merlot (60%), Cabernet Franc (40%)

Average age of the vines: 20 years

Culture :

Conversion to Organic Farming

Harvests, winter work and many green work done by hand.

Production: 7900 bottles

Vinification and aging:

Sorting and total destemming. Semi-buried gravity cellar. Fermentation on indigenous yeasts, traditional aging in cement vats (11 months).

Inputs limited to the strict minimum and deliberately low sulphite content (31 mg / l, authorized in organic 100mg / l)

Tasting:

Passion is a red wine of an intense color, with aromas of red fruits and a full fruity note. It has an exceptional length in the mouth.

Duration of guard: 6-8 years

Serving temperature: 18 ° C

Alcohol: 13.5%

Since May 2015, the Schmid-Haguenin family has been working to revive Château L’Escarderie.

Engaged in Organic Agriculture for certification in 2018, the owners make it a point of honor to make a true wine, as natural as possible.

The harvest and many works are done manually. Animal traction with horses is practiced to avoid soil compaction and allow very precise work under the cavaillon.

The cellar of the XIXth century, of very clever semi-buried design, allows a natural regulation of the temperature and a contribution of the grape harvest. It is only the yeasts naturally present on the berries that will trigger fermentation.

During the whole vinification and maturation process, a professional oenologist follows up. Impeccable control of the sanitary state makes it possible to considerably reduce the amount of sulfur necessary for good aging.
