Morizès (Bordeaux)
Located on the hillsides, Château Chillac is a medieval castle which has had several owners and certain looting periods.
Today, a dovecote, loopholes, the remains of a Levi bridge, stone columns, carved door towers, a chapel door are among the many remains left from this era of prosperity.
Today there remains a very beautiful stone residence with its outbuildings, its tower and its cellar forming an enclosure. Many legends cross the centuries and are passed from generation to generation on the castle.
Vines, woods, meadows have always surrounded Chillac and nowadays the castle belongs to Christelle, Laurent and their two daughters Charlotte and Anne.
CHILLAC CHILLAC
The vineyard has belonged to the family for several generations. At the start the castle had 1 ha 67 a of vines. Currently we cultivate a little more than 50 ha of vines, 35 of cereals and some woods. Each generation has contributed to the building by renovating and maintaining the buildings. We are sure to continue this project and we continue, year after year, to carry out work to make Chillac even more welcoming.
THE CHÂTEAU QUILLET
In 2013, the acquisition of Château Quillet, a wine estate, expanded our region and is located near the town of Morizès.
At first glance, the house does not look like a chalet, but it is the name that the Morizeans have chosen for a very long time to designate the house which does not go unnoticed with its bands of red bricks on the front which contribute to creating a unique personality in these vineyard landscapes. Legend has it that during the Gallo-Roman period, the village of Morizès was located on the site of Quillet and that an epidemic of plague would have forced the inhabitants to flee to the valley. Perhaps because of its high position, with a 360 ° view of the hills of Morizès and the Garonne valley.
Today, a dozen hectares benefit from the diversity of the terroir and high temperature ranges between morning mists and very sunny afternoons, thus optimizing the maturity of the grapes that have come to enlarge the family's vineyards. .
THE VINEYARD
A multitude of soils make up our plots. Sometimes clay-limestone, sandy, sometimes stony, in maximum exposure to draw the sun in order to reach good maturity, we kindly exploit the qualities of all the natural contributions for a wine closer to nature.

ORGANIC AGRICULTURE AND BIODYNAMICS
The vineyard is in complete harmony with the surrounding elements. We replant hedges and trees every year to promote biodiversity. Sowing cereals in the rows to compete with the grass, reducing mechanical passages, multiple decisions are made to contribute to healthier soil. The management of humus, water and organic matter are also a priority to maximize microbial life in the soil.
Concerned about our land, its future, we are in perpetual evolution in order to live closer to our nature.

THE CHAI
The tanks are thermo-regulated, made of concrete and stainless steel. The number of vats allows us to make the most of the aromatics of each plot before blending. We do not sulphite our wines during vinification and depending on the market we add or not a little sulfur before bottling. For long weeks we support the development and aging of our wines in our cellars in a soothing, calm atmosphere that rewards the hard work of the year of our team.
A Canadian well has just decorated our bottle cellar so that the humidity and the air are homogeneous during all seasons.
Constantly evolving, many approaches, training and certifications complete our work each year.
