Château de Bayle
Targon (Bordeaux)
The biodynamic adventure began in 2017 with the takeover of the farm by Serge and Claudine Chauveau. Since the summer of 2022, SAS Séléné de Bayle has been pursuing the dynamic of natural wine on the clay-limestone hillsides of Targon in Entre-deux-Mers, 20km from St-Emilion and 35km from Bordeaux.
The wines of Château de Bayle reflect our values: to produce a natural wine with respect for our environment. Our wines are vinified, aged and bottled at the property under the Vin de France appellation, certified AB and Démeter.
The plots of vines have an area of 10 ha, cultivated biodynamically. The estate's grape varieties are Merlot, Cabernet Sauvignon, Cabernet Franc, Petit Verdot and Sauvignon.
The Sauvignon harvest is manual, the bunches are destemmed then moderately pressed then put in stainless steel vats for vinification. The Cabernet Sauvignon grapes are mechanically harvested and then vinified in 10hl sandstone amphoras, while the Cabernet Franc and Merlot are mechanically harvested before being aged in a 50hl wooden cask and 100hl concrete vats.
The harvest receives a maximum dose of sulfur (2.5g/hl) and fermentation is done only by indigenous yeasts.
Our wines are aged in four 10HL sandstone amphorae, a 3HL terracotta egg and oak barrels for a variable period of 12 months. Two to three rackings are made during this period.
We have the demanding Démeter certification, which corresponds to our values.
Our future Blanc-Entre-deux and Orange vintages will have VNF (Vin Naturel France) certification this year.
