Manual harvest, whole grape pressing. The must is cooled to 4 ° C to leave enough natural residual sugar. A very slow fermentation is done. Breeding on lees for 4 months with batonnage.
Tasting
Richly fruity on the nose, in the mouth, the spices accompany aromas of ripe fruits reminiscent of quince and mango. Rich, fat and well balanced, this persistent wine finishes on a very pleasant freshness.
