L'Obligé 2021 AOC Saumur Puy-Notre-Dame
Terroir
The vines producing Cabernet Franc are located on the Turonian slopes of the appellation, with clay-limestone soil and a temperate climate. This typicality thus allows the grape an optimal maturation. The Saumur Puy-Notre-Dame appellation is a recent appellation, which imposes compliance with very strict specifications, with a sharp plot selection and a low yield, to produce a wine of high taste quality.
Vinification
After selecting the best plots of our vines, the grapes are harvested when ripe and then sorted, to keep only the fruit. A low temperature fermentation (between 20 and 25 ° C) is carried out with a long vatting of 20 to 30 days depending on the vintage. The final blend allows the wine to sublimate its aromas. Bottling is done after aging in new barrels for 15 to 18 months.
Tasting
The color is dark with brown reflections. The nose, slightly vanilla from its aging in wood, releases aromas of undergrowth and stewed fruits. The palate has a round and ample attack, the tannins are melted.
L'Obligé is a structured wine with a lot of substance but the finesse of the grains is present and offers a length in the mouth while elegance.
Gastronomy

The plots of this cuvée are rigorously selected at the approach of the harvest to choose those which will offer a grape rich in aromas.
Vinification
After a precise blend, the wine is aged in barrels in French oak barrels for 12 months. The aging in barrels then allows the wine to gain in roundness and to develop subtle woody aromas, which will delight the palate of connoisseurs.
Tasting
The color is pale yellow with dark reflections. brilliant. The nose, toasted and vanilla, gives way to a slightly floral finish. We find a good length in the mouth and a good balance, with fruity notes of candied pineapple.
Gastronomy
Remarkable association with mature cheeses, or quite simply on its own, as an aperitif. Drink cool (10 ° C).

Saint Landor Blanc 2022 AOC Saumur blanc
The Chenin grape varieties draw their nourishment from tufa, under the limestone soil of the region. This late-ripening grape is harvested in mid-October.
Vinification
The grapes are harvested when ripe. A low temperature fermentation (between 16 and 20 ° C) is carried out to preserve the aromatic potential.
Tasting
Beautiful pale yellow color, limpid and brilliant. The nose, of a beautiful intensity, reveals notes of citrus and white fruits. The attack on the palate is lively and confirms the freshness of this wine
