TERROIR Vineyard plot located on a south-facing hillside, east of Chinon on degraded limestones at a place called La Haute Olive.
VINIFICATION Manual and mechanical harvest. Harvest at full maturity. Total destemming. Fermentation in thermo-regulated stainless steel vats.
MATURING Aging in vats until bottling.
SERVICE Between 15 ° and 17 ° C
BOTTLING Spring following harvest. Traditional cork stopper.

Pierre and Bertrand COULY farm around twenty hectares in the Chinon appellation.
Coming from a long line of winegrowers that dates back to the 15th century by the maternal family of Bertrand (Farou), Pierre and Bertrand COULY have chosen to turn to sustainable viticulture. They have received the HVE (High Environmental Value) label for their cultural choices allowing the preservation of biodiversity.
